Maharashtra is cane country, and गूळ runs through its cooking the way sugar does elsewhere: in the amti, in the bhaji, and in nearly every festival sweet. Kolhapur gives its name to one of the best known of India’s jaggeries, described in GI-tagged jaggery of India.
Marathi also has a word for the stage before gul. काकवी (kakvi) is the cane juice boiled thick but taken off before it would set, eaten with bhakri and poured from a bottle.
At Makar Sankranti the greeting itself is made of jaggery: तिळगूळ घ्या, गोड गोड बोला. Take tilgul, and speak sweetly.

The same gur, delivered
Whatever a kitchen calls it, sugarcane jaggery is one food. Ours is made from cane grown in the Muzaffarnagar belt of Uttar Pradesh, crushed on a village kolhu and cooked in open iron kadhais with nothing added, and sent across India as a powder and as cubes.
