Gur in the Urdu kitchen
Urdu and Hindi share the word: گڑ in the Urdu script is गुड़ in Devanagari, and both are said the same way. Platts’ classical Urdu dictionary lists it, and it has not changed since.
شکر (shakkar, also said shakar) is the word to watch. In standard Urdu it means sugar. In the Punjabi-speaking belt it means powdered gur. A recipe that asks for shakkar should be read with its region in mind.

The same gur, delivered
Whatever a kitchen calls it, sugarcane jaggery is one food. Ours is made from cane grown in the Muzaffarnagar belt of Uttar Pradesh, crushed on a village kolhu and cooked in open iron kadhais with nothing added, and sent across India as a powder and as cubes.
