Sulphur-free jaggery, made the way the village always made it
Search for sulphur-free jaggery (or sulfur-free, or sulphate-free) and what you are really asking for is gur that nobody has lightened with chemicals. That is the only kind ShuddhGaon makes: sugarcane juice, a kolhu, an open iron kadhai and time.

What “sulphur-free” means
To make gur look pale and bright, some producers stir sodium hydrosulphite, sold as “hydros”, into the boiling cane juice. It lightens the colour, and it leaves sulphur dioxide behind in the jaggery.
Sulphur-free jaggery is made without it. The juice is cleaned by skimming, the colour is whatever the cane gives, and nothing is added to bleach it, colour it or make it keep longer.
How ours is made
- Crushed on a kolhu. Cane from family farms in the Muzaffarnagar belt of western Uttar Pradesh is crushed on a village kolhu.
- Slow-cooked in the open. The juice simmers in open iron kadhais and the scum is skimmed off by hand. No hydros, no sulphur, no bleaching agent.
- Set, then cubed or ground. The thick gur sets and is cut into cubes or ground into a fine powder, then sealed into food-grade jars at source.
How to tell sulphur-free gur at home
- Look at the colour. Unbleached gur is golden to deep brown, and the shade shifts from batch to batch. Very pale, evenly bright-yellow gur has often been lightened.
- Smell it. It should smell of cooked cane and caramel. A sharp, sulphurous note can be a sign of chemical clarifying.
- Read the pack. One ingredient, sugarcane, and “sulphur free” printed on it. Ours says Chemical Free · Sulphur Free · No Preservatives.

- What is sulphur-free jaggery?
- Jaggery (gur) made without sulphur-based clarifiers such as hydros (sodium hydrosulphite). Those are used to lighten the colour and leave sulphur dioxide in the gur. Sulphur-free jaggery is cleaned only by skimming the juice as it cooks, so it keeps its natural golden-brown colour.
- Is ShuddhGaon jaggery sulphur free?

- Is sulfur-free or sulphate-free jaggery the same thing?
- Yes. Sulfur is the American spelling, and people often type sulphate-free when they mean sulphur-free. All three mean gur made without sulphur-based chemicals.
- Why is sulphur-free jaggery darker?
- Because nothing has bleached it. Its colour comes from the cane and the slow cooking, and it varies with the field and the season, so one jar can be lighter or darker than the last. That is normal, not a defect.
