New season, fresh batch

Cane is crushed in winter, so this is the time of year jaggery is at its freshest. The kolhu is running in Muzaffarnagar and the jars we are packing now are from the batch that just came off the kadhai.

A cube for every cup

Winter is chai weather, and the cubes exist for exactly this. One cube, straight into the cup, no grating and no chipping at a hard block on the counter.

Lohri and Makar Sankranti

Til and gur are what these two festivals are made of. Gur goes into the gajak, the rewari, the chikki and the til laddoo, and a jar of it is an easy thing to hand across at the door.

Is winter jaggery different from the rest of the year?
It is fresher. Sugarcane is crushed in the winter months, so jars packed now are closer to the date the juice was cooked. The jaggery itself is made the same way all year.
How much gur do I need for Sankranti sweets?
For til laddoo, most home recipes use roughly equal weights of til and jaggery. A 500g jar is enough for a generous batch. Powder melts faster into a syrup; cubes need a few minutes more.
