Gur in the Assamese kitchen

Assamese writes the word with its own letter for r: গুৰ. Its place in the kitchen is the jolpan, the light meal of flattened or puffed rice eaten with curd and a piece of gur.

At Magh Bihu, the harvest festival of mid-January, gur goes into til pitha, thin rolls of rice flour wrapped around roasted sesame and jaggery, and into laru, the Assamese laddoo.

What it goes into

  • Til pitha. Rice-flour rolls filled with sesame and gur, for Magh Bihu.
  • Doi sira gur. Curd and flattened rice with jaggery.
  • Laru. Laddoo of sesame or coconut.

The same gur, delivered

Whatever a kitchen calls it, sugarcane jaggery is one food. Ours is made from cane grown in the Muzaffarnagar belt of Uttar Pradesh, crushed on a village kolhu and cooked in open iron kadhais with nothing added, and sent across India as a powder and as cubes.
