In short: No, jaggery does not need a fridge. Keep it in an airtight jar or a closed zip pouch in a cool, dry cupboard, and use a dry spoon. A pack that goes in and out of the fridge gathers condensation, which is what makes gur sticky and powder lumpy. The fridge only helps a sealed spare pack in a very humid house, and liquid jaggery once it is open.

Why jaggery does not need cold

Cold slows mould and bacteria in foods that hold a lot of water, such as milk, curd or cooked dal. Jaggery holds very little: it is cane juice boiled until almost all the water has gone, and in a dry pack there is little for anything to grow on. Its enemy is not warmth but damp. That is why it keeps for months on a kitchen shelf, and why how long it lasts depends on keeping it dry, not cold.

Why the fridge can make it worse

Each time a cold jar comes out into a warm kitchen, water from the air condenses on it, like the drops on a glass of cold water, and some of it gets in as soon as the lid opens. Gur takes that water up at once. Powder sets into lumps, cubes turn sticky and a block sweats. Nothing harmful has happened yet, but damp gur is the gur that can go on to ferment or grow mould.

When the fridge does help

  • A sealed spare pack in a very humid house, through the monsoon. Keep it airtight and never open it in the fridge.
  • Liquid jaggery (kakvi or raab) once the bottle is open. Keep it in the fridge and use it within about two weeks.
  • Gur syrup made at home. Bottle it clean and dry and keep it in the fridge, about two weeks. See gur ki chashni.
  • A soft block you want to grate. Half an hour in the fridge firms it up so it powders instead of smearing.
  • Dishes made with gur, such as kheer or halwa, go in the fridge like any cooked food.

How to keep jaggery in the fridge without making it damp

  1. Make it airtight. A glass or steel jar with a lid that screws down, or the pack sealed inside a zip bag with the air pressed out.
  2. Keep the daily jar out. Decant a week’s worth into a small jar for the kitchen counter, and leave only the sealed spare pack in the fridge.
  3. Let it warm up before you open it. Take the pack out and leave it closed until it no longer feels cold, so the water condenses on the outside and not on the gur.
  4. Wipe it dry. Wipe any drops off the outside with a dry cloth before you open it.

What about the summer heat?

Heat on its own does not spoil jaggery, but it hurries the slow darkening that all gur goes through, and a hot spot near the stove usually comes with steam. A cool cupboard is enough even in an Indian summer; there is no need to move gur into the fridge when the weather turns hot.

ShuddhGaon packs are made for the cupboard

Our powder pouch closes with a zip and our jars with a screw lid, so neither needs a fridge. Close it fully after each use, keep it in a cool, dry place and it stays good for 12 months from packing, with the date printed on the pack.

Questions people ask

Does jaggery need to be refrigerated?
No. Jaggery keeps at room temperature in an airtight container in a cool, dry place. Refrigerating the pack you use every day makes it damp.
Can we keep jaggery in the fridge?
A sealed, airtight spare pack, yes, in a very humid house: let it reach room temperature before you open it. The pack you open every day, no: it gathers condensation each time it comes out.
Can we store jaggery powder in the fridge?
It is better not to. Powder takes up the condensation that forms each time it comes out, and sets into lumps. A closed pouch or jar in a cool cupboard keeps it free-flowing.
Should jaggery be refrigerated after opening?
No. An opened pack keeps until its date at room temperature, as long as it is closed after every use and touched only with a dry spoon.
Why did my jaggery become sticky in the fridge?
Water from the air condensed on it when the cold pack met the warm kitchen, and the gur absorbed it. Dry the pieces, move them to a dry airtight jar and keep it in a cupboard.
Does liquid jaggery need the fridge?
Yes, once the bottle is open. Keep it in the fridge and use it within about two weeks, pouring it out rather than dipping a wet spoon in.
